I have cut this size up for competition cooking with Steak and Brisket, Lamb, Duck and Pork Steak or anything you like to cook. WHERE YOU CAN CONTROL YOUR SMOKE AND COLOR AND HEAT AND FLAVOR OF YOUR PRODUCT. Lets just say, On a 8 min. steak cook you will only use about 1-2 to get that extra sweet to strong and delicate Flavor to your product. Please pictures. Mesquite: Perhaps the most potent flavor profiles that you can get, and it is also bold and distinct when used in the right proportions. It’s a fast-burning wood and gives off a lot of smoke fast. This gives you an intensely rich flavor very quickly. The amount of smoke it produces is more than most smoking woods and this one reason I have a Chunklets line of products so you can control your smoke when cooking. Just another layer of flavor. This is center cut wood with no bark at all. This Mesquite is from the rich soil of South Mississippi Delta. This wood has the Ideal moisture level for optimum smoke about 10-20% Check out my other wood products. NOTE: All this wood is custom cut and split and the ends and the bark have been cut off 1/4 inch so there is no chain saw oil. Bark on the wood is no good to cook with anyway with all the stuff in the air and grows on it. At 2017 Memphis in May World Championship BBQ Contest 8 teams used this wood and came up with a 3rd - 4th - 5th and 13th in whole hog and 11th in shoulder and a 11th in ribs.
