Grain flowing into the stones becomes very thin, flat flakes which integrates all parts of the wheat immediately into the flour, allowing the flour to have more flavor. The cooler temperatures that occur during milling with stones allows important enzyme activity to continue. Protein levels are also be maintained. Our stone-ground flours are milled to order, to retain the nutritional value of the flour. Great River is Certified Organic by Quality Assurance International and approved. Obtaining our certification requires a yearly inspection of our milling facility and records to insure that our products meet industry standards. STEEL CUT OATS: The process of taking oat groats (the whole kernel of grain) and running them through a mill that has steel blades that chop the groats into small pieces. The thicker pieces provide a nutty flavor and a thicker texture after cooking. "IRISH OATMEAL": Steel-cut oats have a nuttier, chewier texture than rolled oats. There is a little bit longer cook time than with oat flakes, but it is worth the wait. Use them for versatile oatmeal or overnight oat recipes, or for crunchy granola.
