One of the distinctive features of Shindo's knives is the "thin blade." Thin-bladed knives are favored by chefs because they offer less friction on ingredients, resulting in a smoother, sharper cut. The knife's core material is a three-layered steel structure, with steel sandwiched between iron. However, because the blade is thin, it can be prone to chipping, so regular maintenance with a sharpening stone is essential. Once you try sharpening it, you'll find it surprisingly enjoyable. It's a great opportunity to dive into the art of knife sharpening. The black-forged finish, which retains the oxidized black scale from the heat treatment (black rust is visible, but it won't affect the knife's performance), provides a rust-resistant surface while offering a unique, raw aesthetic.
