Description: Kopi luwak, or civet coffee, is coffee that includes partially digested coffee cherries, eaten and defecated by the Asian palm civet. Coffee berries are eaten by a civet for their fruit pulp. After spending about a day and a half in the civet's digestive tract the beans are then defecated in clumps, having kept their shape and still covered with some of the fleshy berry's inner layers. The final roasting of the beans would, additionally, eliminate any remaining bacteria. To value its low-level production, the coffee was priced exuberantly. The origin of kopi luwak is closely connected with the history of coffee production in Indonesia back in the early 18th century under Dutch colonialism. The natives collected these luwaks' coffee seed droppings, then cleaned, roasted and ground them to make their own coffee beverage. Kopi luwak is now being declared as the most expensive coffee in the world, kopi luwak is drunk across Indonesia by the wealthiest and choosiest of coffee connoisseurs.
