This cultivation method is known as shaded cultivation. Besides kabusecha, gyokuro and tencha (the raw material for matcha) are also grown using shaded cultivation. Tea leaves contain the amino acid theanine, which is produced by the roots. Theanine constitutes about 50% of the amino acids in Japanese tea and is responsible for the tea's umami. The more theanine and other amino acids a tea contains, the stronger its umami and sweetness. It's known that theanine in tea leaves converts to catechins when exposed to sunlight. Catechins impart bitterness and astringency to Japanese tea, so as theanine converts to catechins under sunlight, the tea develops a more bitter and astringent flavor rather than umami and sweetness. So, what happens if the tea leaves are shaded before harvesting? By blocking sunlight, the conversion of theanine to catechins is minimized, resulting in tea that is high in theanine and low in catechins, thus having stronger umami and sweetness with less bitterness and astringency. The typical shading period for kabusecha varies by region and tea garden but generally lasts about one week to ten days. As we'll discuss in more detail later, a longer shading period results in tea closer in quality to gyokuro, while a shorter period retains more of the characteristics of sencha. Additionally, shaded cultivation positively affects the color of the tea leaves. During photosynthesis, plants generate energy, with chlorophyll playing a crucial role in absorbing light energy. Tea leaves are green due to the presence of chlorophyll. Under shaded cultivation, tea leaves increase their chlorophyll to capture as much precious light as possible.
