Prior to electricity, eggs were held to candle light for inspection. Since the eggshell is transparent, the light from the candle underneath the egg would let you see if a biddy was growing inside. Prior to selling your eggs and by law, you had to post the date when inspected. The "Date Candled" section is where the date would have been written.
