Yuzu is a shrub that produces citrus – yuzus – resulting from the crossing of wild mandarin and Citrus ichangensis. The edible fruit is relatively rare, and highly prized in the Orient, where the plant has been known and cultivated in China for 2,000 years or more. It is also grown in other areas, particularly Japan and Korea.Its growth is slow and it will never measure more than 12 feet in height. It is very thorny, but its asset is undoubtedly its hardiness since it can withstand up to -10°C. Its shiny green leaves are lanceolate, simple and persistent. The small white spring flowers are lightly fragrant: they will give rise to thick, bumpy-skinned fruit, which are usually the size of a tangerine, but yuzus are yellow when ripe.The zest that constitutes this skin is very popular for culinary use, particularly in Japan where it is used in many dishes, but also in jam, pastries or liqueurs. It has little juice but lots of pips. Its acid taste is a subtle, slightly spicy blend of grapefruit and tangerine. Origin: China's Yangtze River upstream Edible - Used as a substitute for lemon and lime, the rind and juice are used for their distinctive, refreshing fragrance and flavor in Japanese-style dishes, also used in drinks and flavorings.
